spotted 2 caterpillars on my citrus plant this morning. I think it could be caterpillar of Papilio demoleus

Please advice whether I should cut the part of the plant with the caterpillars and place it elsewhere for observation or leave it as it is now? will they destroy the plant?

Take cuttings of the plant with a few leaves that would sustain the caterpillar for a day or two, and the continue making cuttings as the cat finishes the leaves. Should not do much harm to the plant if it's not too small.

If you keep the cutting in a small closed lid container (with the cat, of course), the moist environment will keep the leaves alive and will not dry out too fast.
